Garlic Bread

Ingredients

1 loaf of Italian Bread

1/4 cup extra virgin olive oil

1/4 cup butter

1 head of garlic (approx 12 cloves)

2 tbsp of shaved parmesan

2 tbsp fresh parsley, chopped finely

1/8 tsp of sea salt

Directions

Preheat oven to 375.

Split loaf with a horizontal cut across the middle of the loaf

Add a 1/4 cup of extra virgin olive oil and 1/4 cup of room temperature, or slightly softer, butter to small food processor. Finely chop or shred 3/4 of the head of garlic and add to the mix along with 2 Tbsp Parsley and Parmesan cheese. Blend in food processor to combine ingredients well. Smash the remaining garlic cloves with the broad side of a knife, chop coarsely and reserve.

Evenly spread the mixture on each side of the bread loaf. Sprinkle sea salt on the top.

Sprinkle reserved chopped garlic cloves on top of butter mixture.

Wrap loaf in foil and place into preheated oven at 375 degrees for 15 minutes.

Remove bread, unwrap and slice into narrow pieces.

Notes

The 3 of us liked this but Campbell doesn't like the big chunks of garlic on her pieces though. Jill also suggested roasting some of the garlic beforehand and adding the roasted garlic to the spread. Need to try that.
3 heads of roasted garlic was excellent. 1 1/2 im the food processor snd thecrest on the top. Should add another 2 Tbsp of Parmesan sprinkled on top.
